Inspired by the binalot
Posted by: Fats in: Takaw at Sursur!When I went to the dining area, Gemma and Nery were eating rice and paksiw (fish cooked in vinegar, salt, ginger and garlic) left-over from last night. Since I didn’t really fancy something sour so early in the morning, I decided to carry out one of my own instants: bagoong rice with tomatoes.
All the ingredients were availabe: cooked rice (from last night), bagoong (fermented, wet salted tiny shrimp paste - which was the “chinese” style, that is, it’s a bit sweeter), onion leeks, egg, and two ripe tomatoes.
In a wok, heat some oil, put in the bagoong and tomatoes (which have been sliced open). When tomatoes are wrinkled (but be careful not to burn the bagoong), add the rice. Then mix in one egg, and top with the finely sliced onion leeks.
I suppose I got this idea of the tomatoes in the rice from the binalot (rice, viand, tomatoes and salted egg wrapped together in banana leaves. Binalot actually means “wrapped.” Also see Binalot online). But without viand, the tomatoes are really good enough with the rice. And of course, with a big mug of kape-gatas (coffee-milk).
